How do you change the boot config such that it boots into command line
instead of gnome?

While looking at the boot messages using a PSU-ONECOM or similar and
minicom or similar terminal program I think you will see that you have a
2-3 second period to stop the boot process.

Using the minicom tools for Linux or Teraterm for Windown. In uboot, you
can changed "setenv bootdelay 10; save; reboot".
